To make veg pockets, start by preparing the filling. You can use any vegetables you like, such as potatoes, peas, carrots, onions, and beans. Cook the vegetables until they are soft and then add spices like cumin, coriander, garam masala, and chili powder for flavor.

Next, prepare the pastry. You can use store-bought puff pastry or make your own with flour, butter, and water. Roll out the pastry into thin sheets and cut them into circles or squares.

To assemble the veg pockets, place a spoonful of the vegetable filling in the center of each pastry circle or square. Then, fold the pastry over and seal the edges by pressing them together with a fork.

Finally, bake the veg pockets in a preheated oven at 375 degrees Fahrenheit for about 20 minutes, or until they are golden brown and crispy.

Veg pockets can be served hot or cold, and make a great snack for parties or picnics. They can also be packed in a lunchbox for a delicious and nutritious lunch on-the-go.
