    Shev Bhaji Recipe – Hello friends! Our today’s menu is “Shev Bhaji”. The spicy gravy made with onion, tomato and shev it is called shev bhaji. Shev bhaji is best served with roti or bhakri and it is very famous dish in Maharashtra (khandesh). Basically in my childhood my granny was used to make this dish in very different way because she used to grind masala for shev bhaji on pata-warvanta (pot made by stone for grinding a masala) I still remember, the taste of that shev bhaji. This Preparation is also famous food in Gujrat, they called it “shev tameta nu sag” and in Gujrat this recipe is mostly served with “bajranu rotlo (Bajra bread)”.

    Ingredients for Shev Bhaji

    • 1 Bowl Shev
    • 1 Chopped onion
    • 3 cup of water
    • 1 Chopped tomato
    • 4-5 Garlic cloves
    • 1 inch piece of ginger
    • 1 Green chili
    • Salt as required
    • 1 Dry red chili
    • 1 tsp Coriander seeds
    • 2 tbsp Oil
    • 1 tsp Coconut powder
    • 1/2 Bowl Coriander leaves
    • 1 tsp Red chili powder
    • 1 tsp Coriander powder
    • 1/2 tsp Amchoor Powder
    • 1 tsp Turmeric power
    • 1 tsp Garam Masala

    How to Make Shev Bhaji ?

    This is step by step photo instruction to make Shev Bhaji. You just have to follow simple steps and your delicious curry will ready in a minutes.

    Step 1: Firstly cut the onion, tomato (we want half onion and tomato for puree and half for fry) and coriander leaves. Then take mixer grinder bowl add ginger, garlic, dry red chili, coriander seeds, onion, tomato, green chili and coconut powder, grind it well and make smooth puree out of it.

    Step 2: Heat the oil, add chopped onion and tomato in it, fry until it get a smooth texture, then add puree (prepared earlier) in it. Fry this mixture until oil is released from the mixture.

    Step 3: Now puree is fried, add red chili powder, coriander powder, turmeric powder, garam masala, amchoor powder and salt in this fried puree. Remember we have to cook this mixture until oil is released from masala paste. When oil is released from masala, add 2 cup of water in it and let the water boil. After 2 minutes when water is boiled add shev in it. Let this mixture boil for 2-3 minutes.

    It is ready, garnish green chili and coriander leaves on it, now serve this with roti or bhakri. Don’t forget to serve salad and aam chutney (mango chutney) or mango pickle with this dish. you can serve pickle instead of aam chutney. The raw onion or spring onion as a salad is good fit for this dish. You can also make a “gholana” (mixture of green leaf veggies with added red chili powder and salt) with this dish.

    Additional Instructions for Shev Bhaji

    • If you don’t like the amchur powder don’t add it.
    • If you like, add minimum water and prepare minimal gravy.
    • Instead of using puree you can use only fried onion and tomato.
    • If you like aroma of curry leaves, then you can add curry leaves also.
