Shahi Tukda or Shahi bread is a royal sweet form Haydrabad. If you love to eat sweets, then you will definitely like this Shahi Tukda Recipe. It will take very less time to prepare. This is the authentic preparation of deep fried bread slieces in ghee, coated with flavored sugar syrup and thick rabri. Shahi Tukda is same as Double ka meetha, which you can prepare very easily at home. So I am sharing with you a very quick recipe for this delicious dessert. It has roots in Awadi cuisines and it has delicacy of Hyderabad as well as it is the part of there cookery heritage. Shahi means royal and tukda means piece, actually it was a royal sweet for serving to king and queen.

There are many recipes available for this shahi tukda and double ka meetha, but this recipe is best ever. You can also make this dessert with the combination of rusk and condensed milk, with jaggery, Milkmaid, Shahi tukda baked, shahi tukda cake, with egg there are many version are available for this recipe. This is popular in Haydrabadi cuisine. In overall India you will find this dessert in most of the hotels. Here it is raining in Mumbai from last 15 days and atmosphere is really very pleasant due to the rain. Today morning I was cleaning my fridge and my eyes was stuck on bread packet which I brought yesterday from one bakery shop and I completely forget about it’s existence in my fridge:) So I was started to thinking about what I can make out of it. Actually I want to make something different, then I remember about this recipe. I ate shahi tukda first time at Arsalan Hotel, it is very famous hotel in the “kingdom of sweets”, which one? Of course The city of joy-Kolkata.
I still remember the taste, aroma and presentation of that shahi tukda. Then I have started to gather all ingredient at one place to make this tasty dessert. In this recipe we will going to use homemade rabri. Rabri is a thick milk which is one of the India based dessert. This dessert is also popular and very tasty too. We are going to use homemade rabri but it is an instant rabri, made by using milk powder, milk and dry fruits. You can make and use this Rabri for bread rasmali and many other instant desserts. I have already posted Bread rasmalai recipe before this.

Ingredients for Shahi Tukda

- 4 Bread Slices
- 1/4 Cup of Sugar(1 tbsp for rabri)
- 1/2 Bowl Milk
- 1 tbsp Powder Milk
- 1/2 tsp Kewra Water
- 7-8 Almonds
- 8-9 Cashews
- 15-16 Pistachio
- 3 Cardamom
- 3-4 Tbsp Ghee
- Saffron
- 1 1/2 Water
Process for Shahi Tukda
Before start to prepare this delicious and tasty dish, make sure that all ingredients are in your hand. Wash your hand start to prepare our dessert.

Step 1: Take 4 Bead slices and cut it in a triangle shape, remember – don’t trim the bread slices. Cut the bread and heat the ghee, now add cut bread slices in hot ghee. Fry this bread slices until it will convert into the golden brown color and keep it aside. Take almond, cashew and pistachio in mixer grinder bowl and grind it in medium size. Remember grind almond and cashew first, pore it in bowl, then grind pistachio.

Step 2: Heat the pan, add sugar and water in this pan. Let the water boil, then add cardamom and rose water(optional) in this water. Now sugar syrup for bread slices is ready, let it cool. Add fried bread slices in this warm flavored sugar syrup. Keep one fried bread slice in sugar syrup for 15-20 seconds. Keep this all sugar syrup coated bread slices in one plate.

Step 3: Take one deep pan and boil the milk. Add crushed dry fruits, sugar and two drops of kewra water(optional) in milk when it is boiled. Keep pan on low flame and stir it continuously. After 5 minutes keep this aside. Rabri is ready.

Step 4: Now take fried and sugar syrup coated bread slices in decorative plate(optional), pore sugar syrup and rabri on this. After poring the rabri on this bread slices garnish it with crushed pistachio and saffron, keep it in refrigerator for 15-20 minutes.

Ta Da, Shahi tukda is ready! Serve this cool shahi tukda as a dessert after your meal.While serving it garnish crushed pistachio on it, if available then sprinkle dry rose petals on this, it will give taste and fragrance of rose as well as delicious look to your dessert.
Additional Information
- Use kewra water or rose water don’t use both.
- If you want then you can cut bread in any shape you want, like round, square.
- If you like to eat less sweet then use 1/4 sugar.
- While frying bread slices keep gas on low-medium flame, don’t fry it on high flame.
- Fry bread slices in golden to brown color.
- While making rabri keep gas on low flame and add crushed dry fruits after milk is boiled.
- Want to make this for more people then take more bread slices.
- If you like to eat ghee then pore 2 tsp of ghee after poring the rabri.
