There are many version of stuffed brinjal recipe in Maharashtra, India like kolhapuri bharli vangi recipe, baingan masala recipe, maharashtrian brinjal curry and so on. It is a topped menu in every Maharashtrian ceremony. .

    It is preparation of brinjal made by using different spices. This is part-1 of bharli vangi (stuffed brinjal) recipe, because I am going to share more recipes of Bharli Vangi (Stuffed Brinjal). Today we are going to cook a stuffed brinjal but Nagpur style bharli vangi.

    Ingredients for Bharli Vangi Recipe

    • 4 Green Small Thai Eggplant / Brinjal
    • 5-6 Garlic cloves
    • 1 inch piece of ginger
    • 2 tbsp Oil
    • 1 tsp Cumin seeds
    • 2 tsp White til (Sesame)
    • 1 Chopped onion
    • 3 tsp Coconut powder
    • 1 Chopped tomato
    • 1/2 Bowl Coriander leaves
    • 2 tsp Red chili powder
    • 1 tsp goda masala
    • 1 tsp turmeric powder
    • Salt
    • Water

    How to Make Bharli Vangi?

    This are the step by step image instructions to make Stuffed brinjal. Follow the steps and your tasty dish will be ready.

    Step 1: Take brinjal, clean it by using water. Then cut the brinjals in plus sign. Now cut the onion, coriander leaves and tomato, also clean the garlic cloves and ginger.

    Step 2: Now take a deep pan and roast the sesame, cumin seeds, coconut powder, garlic cloves, coriander leaves and ginger. Take it into a grinder bowl and grind it well, make a mixture of masala.

    Step 3: Now take a chopped onion, red chili powder, goda masala, salt, turmeric powder, coriander leaves and mix it in that Masala mixture. Then take a brinjal and fill the mixture in it. Make sure stuffing should be tight, so the mixture will not come out off the brinjal.

    Step 4: Now take a pan and heat the oil. Then first add chopped tomato then add remaining stuffing in the oil and fry until it will get a smooth texture. After that add stuffed brinjal in this fried mixture, fry it well. Then add 3 cup of water and cover the bharli vangi curry for 5 minutes. Check after 5 minutes if brinjals are cooked then switched off the gas. Your stuffed brinjals are ready to eat.

    This type of Brijal preparation is good fit with bajrichi bhakri. Serve this type of preparation with the salad. Enjoy the taste of this brinjal.     Additional information

    • If you want then add powder of peanuts is masala.
    • In brinjal, stuffing should be tight.
    • Fry tomato well, it should be smooth in texture.
    • Use green eggplant, it will give a grate taste to this recipe.
    • If you like to eat pickle then don’t forget to eat pickle with this.
