Step 1:- Heat the pan and add 4 tbsp ghee in it. Let the ghee melt in the pan. Quantity of ghee is completely variable. You can add more or less ghee as per your taste buds.

Step 2:- Now add semolina in a melted hot ghee. Roast it for 5 minutes on low to medium flame. Make sure that semolina should not burn. Roast semolina until you get a nice roasted aroma of it.

Step 3:- Semolina is roasted. Do not burn semolina. Turn off the heat and take out the semolina in a pot.

Step 4:- Now add sugar in a pan and add two glasses of water. Add water immediately after adding sugar so that the sugar does not stick to the pan.

Step 5:- Sit the mixture well and add pineapple juice in this water. Stir the mixture for one minute so that the sugar mixes in it.

Step 5:- Let the sugar dissolve in the water then add cardamom powder. Mix well. Add dry fruits and stir the mixture well for one minute so that the dried fruits are mixed with sugar water.

Step 6:- Now add yellow food color. Adding a yellow color gives the pineapple sheera a nice yellow color and it looks attractive. Stir well so that the color spreads evenly throughout the mixture.

Step 7:- Add the slices of pineapple. Mix well. Cover and let it cook for 2 minutes. Boil the pineapple slices well in this mixture so that they become slightly soft. Soft pineapple slices taste good in this sheera.

Step 8:- See it is boiled now. Add roasted semolina in this water and mix well. Mix the semolina well so that there are no lumps in it.

Step 9:- Cook semolina in this water mixture. Cooking semolina in water doubles the quantity you have added, so add enough water so that the semolina will cook well and the texture will be the same as you like.If you like little dry texture then reduce the water quantity.
